What is Khichdi?
Khichdi is a delicious, healthy, and fulfilling meal. It is easy to digest. Additionally, khichdi does not take much time to be prepared.

Ingredients
½ cup Basmati Rice
***Note: Aged rice is easiest to digest, so you may choose to use this.**
½ cup Moong Dal
*** Both yellow moong dal and green split moong dal can be used in this recipe.***
Spices
¼ tsp Asafoetida (hing)
***Note: It may be better to use the gluten free version of this spice mix if you have a gluten allergy.***
1 tsp cumin seeds
1 bay leaf
1 pod of green cardamom (optional)
¼ tsp turmeric powder
Salt (as per taste)
Fine, chopped ginger
Fine, chopped garlic (optional)
Chopped cilantro leaves (optional)
Butter/cultured ghee: For a vegan option, you may use vegan butter or oil.
Water
For a porridge-like consistency, use four cups.
For a thick and mushy consistency use three cups.
Chopped Vegetables
Pick and choose the vegetables that you will use, e.g, carrots, green peas, onions, etc.
Preparation:
Wash and soak the rice and lentils for about 5 minutes with water.
Set aside the ginger, garlic, spices, and vegetables.
Cooking Directions:
Set an instant pot on saute mode, and, once it is hot, add ghee.
Add the spices: cumin seeds, hing, bay leaf, saute them for 15 seconds.
Add ginger and garlic, and then saute them for 20 seconds.
Add chopped vegetables (optional).
Add soaked and drained rice and lentils.
Add water and salt, still well.
Cover the instant pot and cook it on high to medium pressure for 8-10 minutes.
Wait for the pressure to release naturally, and then stir well.
Taste the khichdi and add salt to it if needed. If it is too thick for your liking, add hot water. Keep stirring it and simmer it until it is bubbling.
Garnish your khichdi with chopped coriander (a.k.a.cilantro leaves).
You can enjoy with little yogurt or little butter on top of it
Ayurvedic Values of Khichdi
According to Ayurveda, mung daal is tridoshic and pacifies all three doshas: vata, pitta, and kapha So, khichdi is highly suggested to people who have a sluggish digestive system, since it helps to cleanse the system.
Additional tips
Mung Daal can be dry roasted on a low flame to add extra aroma to it and it is very helpful for people who have a weak digestive system. Roasted Daal can be stored in a jar once it is cool and whenever needed rinse and use.
Use aged rice as it has a low glycemic index and is easy to digest.
Washing rice with water removes some of the starchy portion, which lowers carbohydrates and glucose.
Soaking rice in water before cooking it can help it cook well.
