Mung Daal Soup

What is Mung daal soup?

Mung daal soup is an easy and flavorful recipe with nutritious benefits. Additionally, mung daal soup is easy to digest, so it is an awesome choice for dinner.

  • Vegan (skip the ghee, use oil instead)

  • Time friendly

Ingredients

  • ½ cup Yellow lentils (Mung Daal)

  • 1-2 tbsp ghee

  • Spices

    • 1 tsp cumin seeds

    • ¼ tsp hing

    • ¼ tsp turmeric

    • Black pepper (as per taste)

    • Salt (as per taste)

    • ¼ tsp Ajwain seeds

  • 1-2 garlic cloves

  • ¾ inch sliced ginger (grated or finely chopped)

  • 1 tbsp lime or lemon juice

  • Chopped, fresh cilantro

  • Water/Vegetable broth

Preparation:

  1. Rinse the lentils

    Start by rinsing the yellow lentils under cold water until the water runs clear. This helps remove any dirt or debris. Additionally, it is recommended to soak the lentils for about 15 minutes.

  2. Set aside the ginger, garlic, and spices

Cooking Directions:

  1. In a pressure cooker, add ghee. 

  2. Once the ghee is warm, add cumin seeds, hing, and all of the other spices.

  3. Saute them for about 20 seconds. 

  4. Add garlic and ginger, and then saute them for another 20 seconds.

  5. Add soaked moong dal (after draining the water).

  6. Add water/vegetable broth, salt, ajwain seeds, and black pepper.

  7. Close the cooker and cook this mix for 20 min.

    ***Note: If you are using green moong, the cooking will take a little longer.***

  8. Wait for the pressure to release naturally, and then open the lid and stir your soup well.

  9. Taste your soup and add salt if needed. If it is too thick for your liking, you can add hot water and keep stirring and simmering it until it is bubbling. 

  10. Garnish your soup with chopped coriander (a.k.a.cilantro) leaves and lime/lemon juice
