Ojas Bites
Recipe for Date Rolls
Ingredients
Medjool Dates - 25
Almonds - 1/4 Cup
Cashews - 1/4 Cup
Pumpkin Seeds - 1/4 Cup
Pistachio - 1/4 Cup
Cultured Ghee - 2 tsp
Desiccated Coconut - 1/2 Cup
Cardamom powder - 1/8 tsp
Cinnamon powder - 1/16 tsp
Parchment paper
Preparation Work
Wash the Medjool dates and pat dry. Crush them in a food processor or cut them in very small pieces.
Chop the nuts based on your choices. I’m using dry roasted almonds, cashews, pumpkin seeds, and pistachio. All the nuts should be roasted.
Cooking Instructions
Heat a pan and add cultured ghee and add crushed dates. Cook them for 2-3 minutes. Make sure the flame is on low and stir continuously to avoid any burns.
Add the roasted chopped nuts and combine evenly and cook for another 1-2 min on a low flame.
Remove it from the heat and add some desiccated coconut powder, cardamom powder and cinnamon powder and allow the mixture to cool till you can handle it with your hands.
Grease your hands with melted ghee and roll the mixture to one massive cylindrical shape like a tree log (6 inches) or you can make any shape of your choice.
Spread the desiccated coconut powder on the parchment paper and roll the prepared dates on it.
Wrap it in parchment paper or cling wrap and keep it in the refrigerator for one hour.
Take it out of the refrigerator after one hour and cut it with a knife. It is ready to serve.
Place it in an airtight container and store it in the refrigerator for up to two weeks.
Additional Tips
We can use finely chopped pistachios to substitute coconut powder.
Always grease your hands while making the massive tree log (step four)
Ayurvedic Perspective
This recipe is wonderful for the Vata dosha in order to balance the cold and light qualities of Vata. In this recipe we have spices that are warming and nourishing along with cultured ghee which is good to moisture the Vata.
